DINNER THIS WEEK
Last Monday I made dinner from this recipe, (Norwegian).
In English:
Macaroni gratin with sausage
200 g macaroni or other type of pasta
1 pc. broccoli
0.5 pc. leek approx. (I used carrots.)
300 g meat sausage (I used hotdogs.)
3 pcs. eggs
3 dl milk approx.
150 g grated white cheese
0.25 tsp pepper
0.25 tsp salt
How to do it:
Cook the macaroni according to the instructions on the package.
Divide the broccoli into small florets and cut the leek into thin rings. Put them in the pot with the macaroni for the last two minutes of cooking time.
Pour the macaroni and vegetables into a colander and let it drain well.
Grease an ovenproof dish with a little butter or margarine, and pour the macaroni and vegetables into the dish.
Remove the skins from the sausages, if any. Cut the sausages into slices or pieces. Mix the pieces in the dish.
Whisk together the eggs, milk and grated cheese. Season with a little salt and pepper, and pour the mixture into the mold.
Place the dish in the middle of the oven at 200 °C(400F) and bake for about 20 minutes, or until the egg mixture has set and everything is heated through.
With macaroni or other pasta as a base, you can vary this dish with what you have in the refrigerator. Broccoli can be replaced or combined with other vegetables, and sausages can also be omitted or replaced - both with other leftover meat, a little fried bacon or vegetarian alternatives.
Sam was not satisfied with this dish, most because of the hot dogs and carrots together, BUT I liked it, so I would def. make this again, maybe with cauliflower next time.

Last Wednesday I think I made pancakes that lasted for 2 days, I did a mistake and added baking soda. They were too fluffy, and made my stomach hurt, but they were so good! I didn’t take any pictures of that, and the recipe is from my dad. Ask me if you want it!

This Friday I made TACO and homemade guacamole, well not actual taco, but close enough.
In English:
TACO CASSEROLE
600 g ground beef
1 tbsp margarine for frying
1 bag taco seasoning
0.5 pcs. fresh pineapple (I used peppers, the long ones, 1 red, 1 orange and 1 yellow.)
0.5 pk cherry tomatoes 125 g cheese (I used way more than that.)
How to do it:
Fry ground beef in margarine in a hot frying pan. Sprinkle on taco seasoning and follow the instructions on the bag.
Clean the pineapple and cut it into pieces, cut the cherry tomatoes in half. If you don't have fresh pineapple, you can also use canned pineapple.
Spread the ground beef, pineapple and tomatoes in an ovenproof dish. Sprinkle with grated cheese.
Bake the gratin in the middle of the oven at 225 ºC (425F) for approx. 15 minutes, or until the cheese is golden brown.
Serve the gratin with salad, guacamole, sour cream, tortilla chips, lime and fresh coriander. Rice also goes well with it.
Sam very much approved this dish, so I will def. make this again another weekend! Next time I will remember to buy salsa and sour cream too.
GUACAMOLE
2 pcs. ripe avocado
juice of 1 pc. lime
1.5 pcs. tomato
1 clove garlic
0.5 pcs. finely chopped red chili (I used green.)
How to do it:
Cut the avocado in half. Carefully cut the knife into the avocado stone, turn the knife to the side and remove the stone. Mash the avocado with a fork and squeeze over lime juice.
Be careful when doing this. If you don't feel completely confident with the knife, you can also remove the stone with a small spoon.
Cut the tomato into quarters and cut out the seeds with a small knife. Cut the tomato flesh into small cubes. Finely chop the garlic and chili.
Mix the mashed avocado with the tomatoes, garlic, chili and chopped coriander. Season with salt and pepper if desired. Cover the guacamole and refrigerate until ready to use.
